Notes:   Many of the meals include cheese.  The starred words (*) are different sorts of cheese:  Gouda, Petits Suisses, Saint Paulin, Samos, Chaource, Kiri, Coulommiers, Babybel, Bonbel.

Aïoli is a regional specialty.  It consists of salted fish, boiled potatoes, green beans and carrots and a powerful garlic-mayonnaise sauce.  It was originally a peasants' lunch, but it has now become a chic item on restaurant menus.  It is only served on Fridays.

For the American taste this menu seems pretty sophisticated.  When I picked it up at the elementary school, I asked the principal if there was much waste.  She said that the only thing the children didn't really like was spinach.
