CHILD DEVELOPMENT AND PSYCHOLOGY 1

Child Development and Psychology begins with a comprehensive study of reproduction, pregnancy, prenatal care and childbirth. The course continues with the development of the child up through age six. Emphasis is given to understanding the child’s needs physically, emotionally, socially, and intellectually. Special topics of study include preparation for birth, skills for effective parenting, positive guidance and discipline, health and safety, and special challenges for children. Everyone has an opportunity to experience being a “parent” of a newborn baby for a weekend through “Real Care Baby”, an infant simulator.

Instruction continues from the first level and includes development from school age through adolescence, child health, safety and nutrition, positive guidance techniques, inclusive child care, tolerance, child abuse and neglect, various types of early childhood programs, and developmentally appropriate curriculum development.  Students learn about a variety of careers relating to children; and begin to compile a professional portfolio.  Direct experience with young children through the on-campus preschool or other child care programs within the community is a major part of this course.

These courses involve the advanced levels of Child Development and Psychology. They are interactive and experiential courses that provide training and upgrading of skills for entry-level positions in child development programs.  Students spend more time in a community classroom setting gaining enhanced experiences with infants, toddlers, preschoolers, and school age children.  In addition, students will plan, prepare, and teach thematic units and activities related to language development, math, science, music, art, and motor development.   They will expand their professional portfolios, learn about job search skills, and acquire strategies for the job interview process, which will assist them in their job search quest.  During the Professional Practicum, the final course level, students have an opportunity to explore and experience careers that they are interested in pursuing after graduation, inclusive of job shadowing professionals in those fields.

A Child Development Career Path Program is available for students who are seriously considering a career with children. Successful completion of the Child Development Career Path Program earns the equivalent of 6 ECE college units and qualifies students for a position as Assistant Teacher in a child care center, according to the state Child Development Permit Matrix.  

INTRODUCTION TO TEACHING AND LEARNING 1, 2

This course introduces the philosophical, social, and the historical roots of education in America, as well as exploring current issues and challenges in education.   Students will gain knowledge and experience in the areas of various learning styles and methods, effective teaching strategies, observation types and techniques, the learning requirements of exceptional needs children, curriculum methods, planning, and development, effective classroom management strategies, and the multifaceted roles and responsibilities of a teacher.  Students will apply the knowledge and skills gained throughout the course by participating in a professional practicum within a classroom environment, through serving as a Teaching Intern for a teacher on our campus.  Some of the responsibilities of this role include observation, helping struggling students on a one-on-one basis, working with small groups, assisting with preparations, grading, designing and implementing lesson plans for the class, creating a final exam review activity, and helping the mentor teacher as needed.  This course provides students with the opportunity to truly make a difference in the lives of their peers, and to explore teaching as a possible career choice.

FOODS and NUTRITION

Do you like good food?  Are you concerned about your weight and over-all wellness?  Do you like working with others?  Does a career in some aspect of the food industry interest you?  Then Foods and Nutrition is the class for you.

Foods and Nutrition is a course designed for the beginner student to develop knowledge about food and how it relates to our life and basic nutrition.   Basic food preparation skills will be developed along with nutrition basics, food and kitchen safety, meal planning, budgeting, and exposure to careers available within the food industry.  Classroom experiences include team dynamics, discussion & films, and project preparation.  Students will work in groups to plan, prepare, and evaluate foods in a kitchen unit in the classroom.

Do you have a creative side that needs to be unleashed?  Are you interested in a career in the fashion industry?  Clothing 1-6 offers a hands-on opportunity to create clothing and accessories of your choice and exposure to the wide assortment of careers in the fashion industry.
Students learn to construct ready-to-wear garments and accessories from commercial patterns while incorporating individual creative touches.  Students engage in hands-on learning experiences through: selecting sewing equipment, patterns & fabric selection; laying out the pattern on the fabric; transferring pattern markings; cutting; fitting and altering of patterns; basic hand stitches; seam finishes; pressing techniques; while sewing on standard sewing machines.  Upper level students continue to build on the sewing techniques acquired in the previous levels to include projects that involve new sewing techniques that require more detail while using challenging fabrics. 

CULINARY ARTS

Grade Level: 11-12

Prerequisite: None

PHS: Practical Art

Using the on-campus Titan Terrace Cafe, students work while learning entry-level job skills used in the restaurant business.  Instruction includes planning, preparation, & serving meals in a restaurant.  Jobs include chef, assistant Chef, cashier, and waiter/waitress.  Great food is served to our campus staff twice a week.  Students are encouraged to compete in Skills USA competitions where they will practice and study more in-depth cooking and baking techniques and compete against other students.  Students will graduate this class with skills of safety and sanitation, nutrition and healthy meal planning and a current resume that is ready to use.

When taken in succession with Foods and Nutrition college credit may be earned.
